A new boutique for Les Chocolats de Chloé has brought a burst of colour and childhood wonder to Montreal, with a richly detailed fitout designed through a close collaboration between ADHOC, maubau studio, Eliova Construction and Mesure lab.
Opened in time for the holiday season, the compact store transforms the artisanal chocolate making process into a flexible architectural language that supports both storytelling and retail performance.
The concept reflects how chocolate is crafted. ADHOC developed an interior structured around a square motif that symbolises the handmade ganache boxes produced on site. This motif appears in a modular lacquered metal grid that lines the walls and provides a highly adaptable framework for tools, decorations and seasonal displays. The grid allows the store to be reconfigured with minimal intervention, which means new collections and peak trading moments can be accommodated without disruption.
The design narrative continues through references to chocolate moulding, slicing, enrobing and decorating. The main counter and neutral display units present a calm exterior that contrasts with vivid interior colours. This approach borrows from the protective shell of enrobed chocolates and strengthens the sensory character of the interior. A tubular suspended structure carries lighting and signage and introduces a strong graphic element that aligns with the brand’s identity.
Despite the boutique’s small footprint, the circulation strategy is carefully composed. A central reception counter defines the customer zone while showcasing signature products. A full height glass partition separates the kitchen from the retail space and invites visitors to observe the production process without interrupting workflow. This transparency highlights the craftsmanship at the heart of the brand while maintaining hygiene and operational efficiency.
The result is a cheerful and immersive environment that stands apart from the more restrained interiors common in Montreal. Textures, colours and aromas create a festive atmosphere that encourages visitors to slow down and savour the experience.
The project has also earned industry recognition. At the 2025 Grands Prix du Design, the fitout received three Gold certifications and was named Grand Winner in the Special Awards category for Interior Design and Collaboration. This success reflects the close partnership between the chocolatier and the design teams and the shared commitment to creating a space where chocolate is both product and inspiration.
