Achime Bagel makes a ritual of the morning bagel

A neighbourhood bakery is putting the everyday ritual of buying fresh bread at the centre of its design, with Achime Bagel bringing production, hospitality and brand identity together within a compact space.

Designed by Jojo Workshop, the bakery was conceived as a small place that could gently accompany the beginning of each day.

The bakery prepares and sells its bagels on the same day, and the interior translates that simple, diligent approach into a space where the process of making is deliberately placed on show.

An open kitchen sits at the heart of the bakery, allowing visitors to watch ingredients being prepared, dough shaped and fresh bagels baked. Rather than separating production from the customer experience, Jojo Workshop brings the two together, making the rhythm of work and warmth of freshly baked bread part of the atmosphere.

The arrangement presented a practical challenge. Production, storage, ordering, collection and customer circulation all needed to operate within a compact footprint. Equipment placement and working distances were repeatedly reviewed to reduce unnecessary movement and support the bakery’s daily workflow, while keeping the customer area open, calm and visually clear.

The material palette combines white surfaces, timber, stainless steel, green ceramic finishes and vivid red accents. White provides a bright backdrop for the activity of the bakery, while timber adds warmth and tactility to areas frequently touched by customers. Stainless steel provides the durability, hygiene and maintenance requirements needed in the working kitchen, while red elements act as clear visual markers and give the bakery a distinctive identity.

Custom furniture also forms part of the spatial branding. The Achime Pickup Wall was designed for takeaway and delivery orders, with its composition inspired by the image of bagels gathered together and waiting to leave the bakery. Its shelves and cabinets can be moved or detached, allowing the furniture to respond to changing operational requirements.

Elsewhere, the Achime Sign Board draws on the image of a rolled message being unfolded, creating a dedicated place for sharing news with customers. At the entrance, a circular solid timber handle references the familiar form of a bagel. Enlarged to 180 millimetres in diameter, the shape becomes a tactile architectural detail that visitors encounter before entering the bakery.

For a neighbourhood business, these small gestures give the interior a sense of personality without overwhelming its primary purpose. Every element contributes to a working environment designed around freshness, efficiency and the daily interaction between staff and customers.

Through the integration of production, furniture, material and spatial branding, Achime Bagel turns the ordinary act of buying breakfast into a modest morning ritual. The design reflects the bakery’s commitment to making fresh food each day, while creating a welcoming place for the neighbourhood to begin its day.
